3 Ingredient Black Bean Soup

With only three ingredients, this soup is quick and simple to make without sacrificing flavor. Add all of your favorite toppings and serve as a main course or in addition to your full on fiesta!

 

Ingredients

▪   2 cans black beans (15.5 oz cans)

▪   1 can diced tomatoes with green chiles (10 oz can)

▪   1 cup chicken broth

 

Directions

1. Combine all three ingredients in a medium pot and mix together. Bring it to a boil and simmer for 10 minutes.

2. Remove the pot from the stove and blend the soup until it’s smooth using an immersion blender (preferred) or in a regular blender. Serve while hot and top with your favorite garnishes.

Notes:

This recipe makes about 4-6 servings.

You can easily make this a vegetarian meal by using vegetable broth versus chicken broth.

If using a regular blender, please be extra careful and make sure to hold the lid down very tightly, otherwise it’ll pop off and you’ll be stuck with a mess and possible burns.

Make this soup more of a meal with some crusty bread or tortilla chips for dipping. Or my personal preference, a side of avocado on toast. You can top it with sour cream, shredded cheese, tomatoes, jalapeños, or whatever your heart desires.
